#PretendCookingShow: Crunchy Salad. 🥗☀️ Today I made for you a salad outside in my garden…because I can! Thanks to @kitchenaidusa Cordless System, we can make anything, anywhere—NO CORDS. 🙌 Maybe you want to whip egg whites in front of the TV, or finish up a protein smoothie in the car outside the gym, or use a chopper at your dining room table. In millions of ways and for so many reasons, having the ability to use a food processor anywhere without worrying about a plug— it’s cooler than you even expect. 🚫🔌 Enjoy this salad without ever setting foot inside. 🌱☀️.Mega Crunchy Romaine Salad via @cookieandkateIngredients:For Salad• ⅔ cup uncooked quinoa, rinsed• 1 small head of romaine, chopped• 1 cup carrots, shredded• 1 cup cabbage, chopped• ½ cup radishes, chopped• ½ cup dried cranberries• ½ cup raw sunflower seedsFor Zippy Cilantro Dressing• ⅓ cup olive oil• 3 Tbsp lime juice• 2 Tbsp rice vinegar• ¼ cup lightly packed fresh cilantro• 2 tsp honey or maple syrup• 2 medium cloves garlic• ½ tsp fine-grain sea salt• ¼ tsp chipotle or regular chili powder.Directions:1. Cook the quinoa according to the package instructions.2. In a large serving bowl, combine the prepared romaine, carrots, cabbage, radishes and cranberries. Sprinkle with sunflower seeds. Once the quinoa has cooled, add to the bowl as well.3. Prepare the dressing: using your KitchenAid Go™️ Cordless System Juicer, juice two limes. Swap the battery from your juicer to your KitchenAid Go™️ Cordless System Hand Blender, combine all of the dressing ingredients and blend well. Taste, and adjust as necessary—it should be zippy, but if it’s overwhelmingly tart, add a bit more honey. If you’d like a little more kick, add another ¼ teaspoon chili powder.4. If you’ll be serving the salad all at once, drizzle in enough dressing to lightly coat the salad once tossed (you might not use all of it), and toss to combine. If you intend to have leftovers, store the salad separately from the dressing, and toss just before serving.

#PretendCookingShow: Bisquetes. Something new for back-to-school breakfasts. These with eggs and bacon/peanut butter/butter and jam/cream cheese/butter and honey…..yum. 🍳🥓🥜🧈🍯.Mexican Bisquetes by @177milkstreetIngredients:2 tsp instant yeast6 Tbsp whole milk, room temp, plus 1 tsp4 large eggs, cold3 cups bread flour, plus more for dusting⅓ cup sugar2 tsp baking powder¾ tsp salt12 Tbsp cold unsalted butter, cut into ½-inch cubes.Directions:1. In a liquid cup, sprinkle yeast over milk. Let stand for 10 mins. Whisk eggs; measure 2 Tbsp beaten egg into a small bowl, whisk in 1 tsp milk; set aside for egg wash.2. Whisk yeast mix until dissolved. Add eggs and whisk until combined. In stand mixer with paddle attachment, mix flour, sugar, baking powder, salt on low until combined. Scatter in butter. Mix on med-low until butter is in bits no larger than ¼ inch. Mixer on low, gradually add egg-milk mix. Increase to med-low and mix until a wet, shaggy dough forms and no dry bits.3. Scrape sides of bowl and gather dough in the center. Cover and fridge for 30-45 mins. Line a rimmed baking sheet with kitchen parchment.4. Flour counter and turn chilled dough out. Gently knead until smooth; dust dough, counter and hands with flour as needed. Pat dough into ~6in square. Using floured rolling pin, roll to 8x14 with short end nearest you. Using a pastry brush, dust flour from the surface of dough.5. Using a 2¾-3in round cutter dipped in flour, stamp out as many rounds as possible from dough. Place rounds on prepared baking sheet. Gather scraps and stamp out addtl rounds, as needed.6. Using a smaller cutter, score a circle in each; do not cut through. Cover with towel and let rise at room temp 1 hr (Or cover your shaped bisquetes with plastic wrap sprayed with nonstick spray and leave in fridge overnight; bring to room temp an hour before morning baking) Preheat oven to 400°F with rack in middle.7. Brush surface and sides of each round with egg wash. Bake until deep golden brown, ~12-15 mins. Cool on baking sheet on a wire rack for 10 mins, transfer to rack.8. Yum.
