This Passover-friendly meal could not be easier to make! It's delicious, only requires a few simple ingredients, and is packed with protein and nutrients. There are many jokes and stereotypes about Ashkenazi food being flavorless, but to me, this dish tastes like pure comfort. 🥰Have you tried Matzah Brei? Give it a go and let me know how you like it! Chag Sameach! 🌷🥚💫Matzah Brei (2 Servings):- 2 pieces of Matzah, broken into pieces - 6 eggs- Drinking water - Butter or vegan butter- Salt- Pepper- Onion PowderInstructions:- Soak broken pieces of matzah in drinking water until just soft with crispy edges- Pour out most of the water but reserve around a tablespoon in the bowl - Crack six eggs into the bowl with the matzah- Add onion powder (I don't measure, but it should be about a teaspoon. You can always start with less and add more to taste)- Whisk until combined- Melt 2-3 tablespoons of good butter in a pan over low heat (low heat ensures eggs stay creamy, not rubbery)- Add in egg/ matzah mixture- Stir consistently over low heat (I use a wooden spatula as it's better for hormonal health than heating up plastic utensils) - Once it's close to your desired consistency, add in salt and a tiny bit of pepper to taste. When this photo was taken, between takes, @kristofferson was writing a song on the fly. "I wanna be a dolphin when I die". He never wrote down the lyrics though I wish I had, just slowly put it together line by line as we filmed the scene. Needless to say, watching the man who wrote "Bobby McGee" come up with a song that seemed to be just for us was one of my life's greatest pinch-me moments. Kris was a soul-born artist. There was no stopping it. His creativity was a tsunami. It came out in big ways, in little ways, a glance, a hum, a smile. He was touched, and he bled kindness. To know him was not only to love him, but to feel something, deeply. Alive, comforted, awakened, amused, bewildered. "I wanna be a dolphin when I die"... it's hard to believe that day has come. But if the life of a dolphin is what you wanted, dear Kris, I'll be watching the oceans. Because if you're there, so is the magic. Rest in peace to a kind and humble legend. ????????️????

Last night, on Mother's Day Eve, we got another negative pregnancy test. By now I know not to let it get to my heart. I try to remind myself that the reality of our current struggle is temporary. That it's all temporary. But there are times I just need to allow the grief to come stay a while. Mother's Day is one of those times. On Mother's Day I often feel both like a motherless child and a childless mother. A bit odd since my mother is still alive, but we don't have a relationship at this time. (PS: I strongly recommend we start healing our own generational trauma before having children of our own- it just makes things so much happier and healthier.) Lately to heal my mother wound, I've been doing a deep dive into self-mothering. Tending to my inner child on a moment to moment basis. Listening to her. Providing for her. Putting her needs before my wants. I've been expressing gratitude for the High Grand-mothers: Mother Earth, the universe, the unconditional and eternal providers. Also, leaning into the mothers in my life- family and friends who feel like surrogate mothers, guides, healers, and nurturers. No matter how present or positive our relationship with our mothers, we have access to an endless source of maternal energy. We are forever held, protected, and loved. This weekend at @indypopcon was amazing. Thank you so much to everyone who came out to show their love. This was some of my favorite time I've gotten to spend with @emilybett @coltonlhaynes @davidpaulramsey and @johnscotbarrowman . We've shared years of wonderful memories together, but somehow, coming together like this after filming has ended, a little older, a little wiser, a little more seasoned by life, a little more open-hearted, it felt like everyone's soul was shining brighter and clearer than ever. I felt closer to them than ever. I am filled with so much gratitude to have these people in my life. True friends who I would trust with anything, whose company I enjoy every single second of... In adulthood, these kinds of relationships are not easy to come by.
